Since wood pellet grills work by indirect heat, you’ll be able to smoke food as well, without any accessories. You will need to make sure there’s an electric outlet nearby since most need to be plugged-in for the ignition and the auger. If you know that you’ll be cooking multiple different types of food or meats, you might also need to consider multiple burners on a larger grill. This’ll give you more temperature zones, and make getting everything to the table so much easier. Lastly, you need to make sure your grill fits your allotted space, and/or is able to move, should you need to store it or bring it on a roadtrip.
Charcoal is easy to pick up at just about every grocery store, home improvement store, or gas station, so you won’t need to make a special trip. But you’ll need to have a charcoal starter on hand, will have to wait for everything to cool down before you can dispose of it, and need to deal with the messy ash afterward. We’ve determined that a three-burner grill is large enough for most needs, with plenty of space to cook for a family dinner or a backyard barbecue. Grills with more burners weber bbq are usually overkill, and two-burner grills can feel cramped. Weber added two new models to its Spirit line of gas grills in 2020, but we ultimately chose not to test them.
Its temperature fluctuated no more than 20 degrees over six and a half hours of smoking. The hinged sides and pop-out center of the grate are nice for adding charcoal while cooking. We found it difficult, however, to use these to arrange or bank the coals without burning ourselves, as it required us to remove the entire grate for safety.
We liked its sizable searing zone for high-heat cooking (it fits about 20 burgers) and how well it held low temperatures for slow-roasting foods. Its built-in thermometer provided accurate readings in our tests. We found a slight variation in heat between the center and outsides of the grill, though more noticeable with the lid open. We also needed to turn up the heat to produce a distinct char. In the end, these issues were minor, as the E-325s topped our list of the best gas grills.

To some extent, all grills run cooler toward the front of the grate, but in our tests the Spirit II E-310 offered the most consistent heating across the entire grate surface. After 10 minutes, the burgers at the rear, the hottest part of the grill, were medium-well, and those at the front were medium-rare to medium. (If your diners have various preferences, this difference might even come in handy.) In contrast, lesser grills produced nearly raw burgers in the front and well-done patties in the back.
With porcelain-enameled cast-iron grates, you’ll get excellent heat retention and easy cleanup, as we’ve seen during tests. Whether they were charcoal or propane, stationary or portable, all of our favorite Weber grills had some things in common. High-quality Weber grills are easy to assemble (although as with most other brands, the charcoal grills have fewer parts and are simpler to put together than gas models).
