GreenPan and other companies continue to release newer more updated versions of ceramic nonstick cookware that boast more durable and long-lasting surfaces, and see how they fare in longterm testing. There’s little to complain about here, but it is true that ceramic nonstick surfaces simply do not last. While you can carry on cooking with them, It’s highly unlikely you will be able to pull off an oil-free “egg slide” after a year.

Though stainless steel is less reactive than some other types of cookware, it is not recommended that you store food (especially acidic foods) in your stainless steel pots for long periods of time. Before cleaning, always let a hot pan cool down before soaking—this will help prevent warping—then gently scrub away food particles with mild, soapy water (avoid abrasive pads like steel wool). To maintain the appearance of your stainless steel cookware, use white vinegar and water to remove stains or Bar Keepers Friend to restore shine.

That said, stainless steel, by nature of how it cooks food, is prone to (harmless!) stains that require a smidge more effort to get out. Some pans were unanimously denounced as too heavy, others as having unbearably uncomfortable handles.

The exception is ceramic nonstick, which comes from silica manufactured through something called a sol-gel process that creates a nontoxic nonstick cooking surface. The downside to ceramic nonstick is that it typically only lasts one to three years before losing its nonstick properties. That being said, we understand that there are many home cooks out there who just want to make dinner on easy mode, and not have to stress too much about technique and clean up. Especially when cooking eggs in dishes like like crepes, omelets, and frittatas, nonstick properties are an undeniable boon. Stainless steel can warp, depending on how it’s made and how you’re using it.

Despite those caveats, this is one of the best cookware sets we’ve ever tested. During three rounds of testing, these pans repeatedly heated quickly and maintained their heat well enough to provide a nice sear. They also performed well when making an omelet without sticking at all. Handles stayed cool, except for the smaller saucepan, whose handle is a little shorter and therefore sits closer to your stove’s heat source—be sure to have a dish towel or potholder nearby to grab it if the handle gets too hot. Chefs look for even heat absorption and retention that offers a level of control to prevent ingredients from sticking, burning or cooking in an uneven way. The best cookware, in our minds, is cookware that is built to last a lifetime, and we will always recommend that over something that needs to be replaced every few years.
