This is one of the redeeming qualities of the Vortex Plus. Dehydrating is easy to do, even for a first-timer following an online recipe. It has a compact design, a stainless-steel front and an easy-to-navigate touchscreen panel up top. The door feels wobbly, but that’s because it’s removable. Release a latch inside the frame, and you can remove the door for cleaning.

Though the Vortex comes with two user manuals, we couldn’t find clear instructions on how to insert the rotisserie basket or spit. After a bit of trial and error—about 10 minutes of fumbling with the accessories—we figured it out, but it would have been helpful to have step-by-step instructions. While the machine claims to broil, it has a set temperature of 400º. Compared to my oven at 550º, that isn’t nearly hot enough. If you don’t have a broiler in your oven this is a solid alternative, but when using it for things you already broil you will need to adjust the time to compensate for the lower temperature.

There is a Instant™ Vortex® Plus 4-quart Air Fryer which is much more comparable to the regular Ninja 4qt Air Fryer. Because it’s a “Plus” it has dehydrate and broil as standard settings. No matter the cooking mode, we found most of the juices and greases collected nicely on the drip pan without making a major mess in the cooking chamber. This isn’t the first line of air fryers to come from Instant. We tested the first edition of the Vortex Plus back in 2019 and had some mixed feelings.

This is the function that I think will get the least amount of use in my kitchen. This humble vegetable is so tender with crispy edges and doused in an amazing sesame sauce.
