They’re all liable to leak, spill, and trash the trunk of your car, so don’t set out without a storage bin or a large, heavy-duty sealed bag to contain grease, ash, and grit. I prefer the weber, coated cast-iron grates to the plated steel grates the Original Kettle comes with, but there are weber genesis 2 worse things, and the plated steel still cooks relatively well. It’s a fun rewarding experience, though to be perfectly honest I now never smoke on this grill because I tend to always smoke on my Kamado Joes. The bowl and lid are protected against burn-through and rust-through for 10 years.

But what really sets the Premium version apart from the standard 22-inch kettle is the enclosed ash catcher, which makes cleanup easy and eliminates concerns about stray embers. Assembly is dead simple, and the construction and materials are sturdy. Add its solid warranty and well-regarded customer service, and the Weber Kettle Premium Grill is the best value going. No matter what you slap on it, the Weber can cook it—hot and fast or low and slow.

Only very old models of Weber grills would require seasoning, and because they are very old, that surely happened a long time ago. If you purchase a new Weber grill, you don’t need to worry about seasoning it. The grill was able to achieve high temperatures as well as larger models, and was even able to sear meat. Lastly, we found it easy to assemble and attach a 1-pound gas canister. Our tester called it “pricey, but worth it” for anyone who regularly grills on the go. If you do want something a bit cheaper or smaller, we’ve also tested and recommend the Q 1200.

I’ve thrown pork, burgers, steaks, chicken, veggies, and even some pineapple on the Weber with fabulous results. You can even use the Weber to slowly smoke more traditional barbecue by adding a little wood to the fire. This Weber’s plated steel cooking grate is hinged so that it’s easier to load charcoal, even while cooking, onto the heavy-gauge steel grate below.

First, we set up each grill for a low-and-slow burn, using the charcoal snake method. In the case of kettle models, we arrange coals in a semicircle around the grill’s inner wall. The charcoal briquettes (Kingsford Blue) form a line two coals wide and two coals deep. We also drop a few chunks of smokewood on top of the snake (aka fuse).

We were really impressed with the meal created using this grill, especially the quality sear marks it left on veggie shish kebabs, hanger steak, zucchini slices, and marinated chicken breast. Though we did miss the true smoky flavor that can only come from wood and charcoal. The authenticity of charcoal grilling started with the Original Kettle® Series grills, invented by Weber? His idea was that the rounded cooking bowl with a lid was the key to success. The ultra-durable, porcelain-enameled lid and bowl are uniquely designed to retain the charcoal’s heat, while dampers are easily adjusted for precise temperature control. The only real learning curve to cooking on a charcoal grill is fire management, but the built-in thermometer makes that easier.

Lastly, we place one rack of ribs on each grill for indirect cooking, with the meat not sitting directly above the coals. The 22-inch Napoleon Rodeo Charcoal Kettle Grill (model number NK22CK-L) is considered one of the better Weber clones available (the pros at AmazingRibs.com, among others, rate it highly). In our cooking tests it performed well, though not quite as well as the Weber. In particular, we didn’t find its unique heat-diffusing plate—a shallow metal dome that sits in the middle of the coal bed—to be as effective as we would have liked. However, at 34 inches at the grates, it’s nearly counter height, and a full 7 inches taller than the Weber, so it was less tiring to work on.

To help find the right Weber grill for you, we tested popular models for weeks and rated each one on setup, heat retention, heat control, size, versatility, and overall value. Many steaks, burgers, veggies, and more were grilled to make sure these Weber grills are truly the best. We placed two steaks on each grilling grate near the center and seared them for five minutes before flipping them over and searing for another five minutes. With a good, reliable grill, this will give you a steak with a seared outside and a medium rare to medium center.

And sadly, the ribs it produced came out burned, charred and overdone. We noted similar temperature performance from the Nexgrill, along with similar rib results. Cooking ribs low and slow on the Nexgrill required just 4 hours, 30 minutes. Its rack came out well too, though like the Napoleon, its bark was more pronounced than what the Weber produced. Interior temperatures had a greater swing, jumping up to 300 degrees F during periods of cooking. While its ribs came out tender and juicy overall, the exterior bark had a few burnt spots.
